All 3 made from Iron, one (3rd one) looks to be forged/hammered iron. Mei on all 3 (if I'm correct) = Raizen Sadsmori Saku

 

Can't tell much about age/era, the 3rd one looks like late Edo, but first 2 are in perfect condition, so rather modern production. All 3 have same Mei. Seller wasn't able to tell me anything about them (or didn't want to) so I can only guess.
