Any help identifying this sword would be great, is there anyway to know how old it is?

Hi Luke,

The signature reads 大和大掾原正則 - Yamato daijo Fujiwara Masanori.

 

If the signature is genuine (faking signatures is not unknown) then the smith is one of these two guys with the same title (Yamato daijo) working around the dates shown:

 

Masanori (正則), 1st gen., Keichō (慶長, 1596-1615), Echizen
Masanori (正則), 2nd gen., Kanbun (寛文, 1661-1673), Echizen

 

My feeling from the shape of the blade is that it is most likely the second one (you can look up the differences between the Keicho and Kanbun sugata which are quite distinct).
